PREMIUM WHITE TRUFFLE
The Tuber Magnatum Pico, or premium white truffle, is the most valuable of all truffles from a culinary perspective. Sought after by chefs around the world for its intense yet delicate aroma, it is characterized by a golden, sometimes ochre-colored rind and a very irregular, slightly flattened shape. Its gleba (the pulp) has marbled hues ranging from pale yellow to red or even hazelnut, depending on the trees where it grows. Its size typically ranges from a walnut to a large orange. It is generally irregular in shape, but in friable soils its appearance is regular and smooth, increasing its commercial value.

BLACK SUMMER TRUFFLE
Also known as Scorzone, the Tuber aestivum Vittadini has a rough surface and a gleba (pulp) of a light hazelnut colour, with fine, irregular veins. It is ideal when eaten raw, cut into small, thin slices to season special dishes such as buttered eggs, or to accompany the sauce of traditional tagliatelle, or in risotto. It is very popular among enthusiasts thanks to its affordable price and easy storage.

UNCINATO TRUFFLE
The Tuber Uncinatum Chatin is an emerging truffle and is considered by many to be a variant of the black summer truffle. It owes its name to its hook-shaped crests. Thanks to its good value for money, its demand is constantly growing both in Italy and abroad. Delicate and fragrant, it is often used raw in recipes that enhance its aroma. Known for its unique organoleptic qualities, the uncinato black truffle is excellent in sauces and pâtés and in tortellini and ravioli dough.
